Pork Spare Ribs with Stuffing
PORK SPARE RIBS WITH STUFFING

THE INGREDIENTS YOU'LL NEED:
- Pork spare ribs – 2 racks - 4 lbs. each
- Dry rub – use your favorite
- Chefs string – 4 pieces, 24” or more long, each
OPTIONAL INGREDIENTS:
- Onion – sliced
- Mushrooms – sliced
- Red bell pepper – sliced
- Jalapeno – sliced thin
- Granny Smith apple – sliced thin
FOR STUFFING:
- Seasoned bread crumbs – 8-10 cups
- Onion – ¼ cup diced
- Celery – 1 cup diced
- Salt – pinch
- Black pepper – pinch
- Chick broth – 2 quarts
DIRECTIONS:
GETTING READY
1. Bring grill temperature up to 300-325 degrees Fahrenheit, with coals offset for indirect cooking.
2. Trim excess fat from spare ribs.
3. Remove the thin membrane by pulling it off with a dry paper towel.
4. Sprinkle dry rub on all sides of the ribs. Set aside.
5. Cut chefs string and lay evenly from side to side on a baking tray. Make sure tray is long enough for the ribs to fit.
FOR STUFFING:
6. Put seasoned bread crumbs in a bowl. (Or substitute your favorite stuffing recipe)
7. Add in onion and celery.
8. Add 1 quart of chicken broth. Mix well.
9. Season with a pinch of salt and black pepper.
10. Mix stuffing together. Set aside.
MAKING
11. Be sure to maintain grill at 300-325 degrees Fahrenheit.
12. Place ribs one at a time directly on grill over hot coals to sear. 3-4 minutes per side.
13. After searing, place first rack on baking tray, meat side up.
14. Cover entire rack with all of the stuffing mix.
15. Add a layer of onions, apples, red pepper, jalapeno, mushrooms, or your favorite toppings. (Optional Step)
16. After searing the second rack, place it on top of the stuffing, meat side up.
17. Pull both sides of the string over the top and tie off. Do this for all four pieces of string.
18. Cut off any excess string.
19. Pour small amount of chicken broth in bottom of pan to add moisture.
20. Cover with aluminum foil.
21. Place pan on grill opposite hot coals for indirect cooking. Place lid on grill.
22. Maintain consistent grill temperature of 300-325 degrees Fahrenheit
23. After 1 hour of cooking, rotate pan for even cooking. Add more stock to pan. }
24. Cook for another hour and a half. Remove foil for remainder of cook time. Add more stock to pan.
25. Place lid on grill and cook for 1 – 1 ½ hours. Cooking times may vary depending on size of your ribs/ cooking temperature.
FINALIZING
26. Remove ribs from grill.
27. Cut ribs into sections for serving.
SERVING
28. Pair with cranberries, sweet potatoes, salad, pit beans, or your favorite vegetables.
