Imagine the perfect marriage between a classic Big Mac and a delectable smash burger, all wrapped up in a soft taco shell.
BBQ Pit Boys
Ground Beef
Soft Tortillas
Big Texan Seasoning
Diced Onions
Cheese Slices
Pickle slices
Shredded Lettuce
1 Cup Mayo
¼ Cup sweet relish
2 tbls Dijon Mustard
1 tsp White Vinegar
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Paprika
Pinch of White Pepper
Heat up your griddle to high heat.
In a small bowl mix up the Mayo, Sweet Relish, Dijon Mustard, White Vinegar, Onion powder, Garlic powder, Paprika and white pepper.
Set aside. Add more paprika if you want it more reddish in color…. There’s NO KETCHUP IN MAC SAUCE!
Mix up your ground beef and seasoning and form into balls about twice the size of a golf ball.
Dice up some onions.
Throw some butter or oil on your griddle and throw on about half cup of onions and keep them close together.
Place your burger ball ontop of the onions.
Place a soft tortilla over the burger ball and smash it down so the burger meat spreads out to the edge of the tortilla.
After a few minutes check for a good crust around the edges of the burger meat.
When it looks good flip everything over.
Add a couple slices of cheese ontop of the burger meat. Drizzle a bit of water beside the tortilla and cover with a metal lid.
This will create a bit of steam to help melt the cheese better.
When the cheese is melted how you like it. Remove everything from the grill and place in a taco holder to help it keep that taco shape.
Shred some lettuce and top the taco with the lettuce, pickles and the Mac Sauce.
Grab a napkin and enjoy!
