So easy to make and so GUUUD! This smoked queso dip is a must have for your party's and game day gatherings.

Ingredients

1 lb ground sausage
-
1 cup diced jalapenos

1 cup diced onions
-
1 pack velveeta cheese
-
3 cups gouda cheese or your fav cheese
-
1 cup sour cream
-
1 can Rotell diced tomato & green chilis
-
1 can regular diced tomato
-
Kansas City BBQ rub to taste
-
Sweet Martha BBQ Rub to taste
Directions
Brown the ground sausage in a pan.
Drain the grease and dump the sausage onto paper towel and pat dry!
Dice up your jalapeno and onions and lightly saute them just to activate their flavor.. about 5 minutes.
Cut the velveeta and gouda cheese into cubes. Use equal amount of gouda to the pack of velveeta cheese. You can sub out the gouda for your fav cheese. Don’t sub out the velveeta.
In an aluminum pan or dutch oven throw in the ground sausage, cheeses, sour cream, jalapenos, onions, can of rotell and can of regular diced tomato.
Season with our KC and Sweet Martha rubs or your fav rub.
Thoroughly mix everything together.
Place in your smoker at 300 degrees for roughly 45 minutes or till all the cheese is melted to the consistency you like.
Be sure to check on it every 15 minutes and give it a good mixing each time to keep everything mixed well together as the cheese melts.
When the consistency is how you like it take it out of the smoker and serve with your favorite food shovel!
