Take your smoked cream cheese to the next level by adding candied bacon and jalapenos! You'll never do smoked cream cheese the plain way again.
Ingredients
-
2 blocks cream cheese
-
Sweet Martha or your fav rub
-
Big Texan or your fav rub
-
4 or 5 strips of bacon
-
1 jalapeno
-
Brown sugar
-
BBQ sauce
-
Honey
Directions
Smoked Cream Cheese
Place the cream cheese on a foil wrapped baking pan.
With a knife score the top of the cream cheese in a cross hatch pattern about 1 inch apart.
Season the cream cheese with your favorite rub on all sides to cover.
Place in the smoker at 180 degrees for 2 hours.
Candied Bacon
Lay your bacon strips out and spread on some BBQ sauce.
Sprinkle with your fav bbq rub and cover generously in brown sugar. Do the same to the other side.
Cook on another grill or oven at 325 degrees for about an hour or until crispy. Don’t forget to flip the bacon half way through.
When done set aside. And chop the bacon up into a fine crumble.
Take a jalapeno, core it out and dice it up. It will be a topping for the cream cheese.
After a couple hours put some BBQ sauce on the cream cheese to fill the gaps of the cross hatch that have now opened up. Continue smoking for another 45 minutes to let the bbq sauce tack up.
When the cream cheese is done drizzle some honey over it and then sprinkle some of the crumbled bacon and diced jalapenos over the cream cheese.
Serve with your favorite food shovel. We recommend keeping some of the remaining crumbled bacon and jalapenos and set along side the cream cheese so people can add as extra topping as they wish.
