Baby back ribs, 2 large pcs

Directions
Cut the garlic and onions as shown in the video.
Prep the rack and score them as shown. Sprinkle some rub, add the chopped garlic and onions over on sprinkled rack.
Pour some of your favorite hot sauce over the onions.
Cover this over with the other rack as shown and tie the rack up with some chef’s string. Pat some rub on the tied rack, on both sides.
COOKING
Medium Heat 250/275 F.
Place the baby rack over indirect heat. Let it cook slowly.
Keep basting some hot sauce over the rack every 15 mins. Keep flipping the rack regularly.
After about 3 hours of cooking, put the rack over a large Aluminum sheet and cover it tight Place it back over the grill and let it cook for another 45 minutes.
Remove the rack from the foil. Cut the chef string and gently scrap the garlic and onion.
Place the rack over the grill for some final cooking. Hit it with some more hot sauce and let it cook for another 15 mins.
