Roasted Garlic Soup

Ingredients

  • 6 bulbs of fresh garlic
  • SPG seasoning
  • 6 slices Prosciutto ham
  • 8 cups beef stock
  • 2 cups diced cabbage
  • 1 large onion diced
  • 2 tbsp. butter 
  • Olive oil
  • 2 tsp red chili flakes
  • 1 cup heavy cream

Directions

  1. Slice the top off the garlic bulbs add a dash of olive oil to each and season with SPG of use your favorite seasoning
  2. Loosely wrap the seasoned garlic bulbs in aluminum foil and place onto a preheated grill or oven and cook at around 375 f /190 c until soft and golden
  3. Pan fry the diced onion with a knob of butter and a splash of olive oil until golden, remove from the pan and then add the prosciutto ham and brown until crispy  
  4. Once the garlic bulbs have cooled down , squeeze out the cloves into a bowl, add the fried onion and blend with a cup or so on the beef broth until smooth
  5. Mix the remaining beef broth into a pot to the garlic blend, add the diced cabbage and simmer for about 20 minutes, towards the end add 1 cup of heavy cream
  6. Add the prosciutto ham when serving
