The BBQ Pit Boys show you how to grill whole Trout, and then serve it with fresh grilled Corn Salsa.
THE INGREDIENTS YOU'LL NEED:
INGREDIENTS
Fresh trout -- 1 Pound, cleanedA
Salt and pepper -- To Taste
Olive oil -- 1 Teaspoon
Butter -- 1 1⁄2 Tablespoon (as needed)
Juice of lemon -- 1⁄2 (as needed)
FOR CORN SALSA
Firm tomato -- 3 , halved
Onion -- 1 , halved
Olive oil -- 1 Tablespoon, divided (as needed)
Jalapeno -- 2
Juice of lemon -- 1
Salt and pepper -- To Taste
Chopped cilantro -- 1 Tablespoon (as needed)
Corn on the cob -- 1 , cooked
Minced garlic -- 1 Teaspoon (as needed)
DIRECTIONS
GETTING READY
1. Preheat grill to medium (325 degree).
MAKING
FOR CORN SALSA:
2. Coat tomato halves and onion with olive oil and place them on grill, over indirect flame. Cover and cook for 15 minutes.
3. Remove tomato, onion, and jalapeno from grill. Peel off the skin of tomato and onion and chop finely. You can remove tomato core before chopping. Chop the jalapeno finely and place them in a bowl.
4. Add lemon juice, salt, pepper, little olive oil, and cilantro. Mix well.
5. Cut corn kernels as shown in the video and add it to your salsa. Mix and set aside. Add garlic just before serving.
FOR GRILLED FISH:
6. Season fish with salt and pepper, both inside and outside and coat with olive oil.
7. Place on grill, over direct flame, put some butter inside the cavity of fish, cover and cook for about 5 minutes per side. Flip once half way through, squeeze some lemon on top and continue to cook.
