Fried Hornets

Ingredients

  • 200 grams of lesser Banded Hornet Larvae
  • 1 teaspoon white pepper powder
  • 3 cloves fresh chopped garlic
  • 3 chopped fresh red chilis
  • 3 chopped fresh green chilis
  • 3 tablespoons dried fried shallots
  • Cooking oil
  • 1/3 cup corn starch
  • Sea salt
  • Fresh brioche bread rolls
  • Iceberg lettuce or lettuce of choice

Directions

  1. Add the corn starch to the partially frozen Hornet larvae
  2. Gently combine the corn starch and place into the pre heated oil ( 375 F )
  3. Cook the larvae until crispy and golden and remove.
  4. Into a pan add a small amount of cooking oil and heat ready to fry.
  5. Add the red and green chilis, the garlic, salt, white pepper powder and stir fry for a minute or so.
  6. Add the fried hornet larvae and mix together for about 1 minute. remove from the heat and place onto the brioche bread rolls atop some lettuce leaves.
  7. Serve hot
