Fish Fillets with Lobster and Brandy Stuffing

FISH FILLETS WITH LOBSTER AND BRANDY STUFFING

Stuffed Fish is good eating any time of the year especially when served hot off the grill.

THE INGREDIENTS YOU'LL NEED:

  • Fish Fillets (we used Cod)
  • 3-Green Onions -thin sliced
  • 4 Cloves Garlic -minced
  • Unsalted Butter ¼ lb.
  • Ritz Crackers -2 packages
  • Cheese Crackers -optional
  • Italian-style Bread Crumbs -1/4 cup
  • Lobster -4lb (substitute scallops, shrimp ETC)
  • Parsley
  • Brandy -¼ cup

DIRECTIONS

1. Chop Veggies 2. Prepare the Lobster as shown 3. Melt a stick of Butter in pan 4. Add and sauté Onions and Garlic 5. Add crackers and crumbs 6. Add juice of 1 lemon 7. Add Brandy 8. Add Lobster meat 9. Add parsley 10. Remove the stuffing from the fire when warm 11. Stuff Fillets 12. Bake until the fish flesh turns white, indirect opposite the coals at 325-350f. Be careful not to over-cook.
