Cheddar Cheese and smoked Bacon covered Chicken Wings are tender delicious, easy to do, and perfect for tailgating or that backyard barbecue.
THE INGREDIENTS YOU'LL NEED:
FOR CHICK
Chicken wings – 4 lbs. tips on.
Thick sliced pork belly bacon – 3/4 lb.
Shredded cheddar cheese – 1/2 lb.
SPG – to taste
FOR WING SAUCE:
Stick butter – 4 Tablespoons
Hot sauce – 1/2 Cup
DIRECTIONS:
GETTING READY
1. Bring grill temperature up to 275 - 300 degrees Fahrenheit, with coals offset for indirect cooking.
2. Place aluminum foil under cooking surface for easy clean up from bacon grease.
MAKING
CHICKEN:
3. Apply SPG on chicken wings to taste.
4. Place wings tightly together opposite coals for indirect cooking.
5. Cover wings with a single layer of thick sliced bacon.
6. Add 1 - 2 of your favorite wood chunks to the coals.
7. Cover grill and cook for 60 minutes. Maintain grill temperature of 275-300 degrees Fahrenheit.
8. Put shredded cheese into a bowl.
9. After one hour, remove bacon from chicken.
10. Chop bacon and add to bowl of shredded cheese. Mix thoroughly.
11. Pack bacon and cheese mixture on top of chicken wings.
12. Make wing sauce by combing ingredients and placing on grill to warm.
13. Replace grill lid for 10 minutes to allow cheese to melt and sauce to heat up.
14. After 10 minutes, remove lid and stir sauce.
15. Remove wings, 3-4 at a time.
FINALIZING
16. Transfer wings to a serving platter.
17. Cover wings with 1-2 ladles of wing sauce.
SERVING
18. Serve with wing sauce, bbq sauce, ranch, or blue cheese dressing.
