Bacon Buttermilk Meatloaf

Ingredients

1 cup diced Onion

Olive oil

1 lb ground beef

1 lb pound Ground Pork

1/2 cup Diced ham

1/2 cup diced Carrot

2 tablespoon Fresh or dried Parsley

2 large eggs
-
2 tablespoons minced Garlic
-
¾ cup Breadcrumbs or panko
-
2 tablespoons Worcestershire Sauce
-
Salt and Pepper
-
½ cup Buttermilk
-
1 tablespoonHot Sauce
-
1 pound Pork belly Bacon
-
1 cups Ketchup
-
¼ cup Brown Sugar
-
2 tablespoons Worcestershire Sauce
-
2 tablespoons Balsamic Vinegar
-
1 tablespoon sriracha Sauce
The Glaze
Directions
Mix the meat and all ingredients together in a bowl
Line a meatloaf pan with bacon strips
Put your meatloaf mix in the pan
Cover the top of the meatloaf with more bacon!
Grab a baking sheet and flip the meatloaf over onto the baking sheet and remove meatloaf from the pan.
The Glaze
Mix all glaze ingredients together in a sauce pan.
Heat it over a medium heat to simmer it for a few minutes.
Brush over the meatloaf.
The Cook
Place on the grill for indirect cooking
Half way through cooking turn the meatloaf if you are using indirect with charcoal. If using a pellet grill just leave it and you're good.
Cook till internal temp reaches about 165f
