The Sauce

1 cup bourbon whiskey 1/2 at start of reduction 1/2 at end 1/2 cup brown sugar 1 cup ketchup 3 Tbsp Red Chili Flakes 1 Tbsp White pepper 1/2 teaspoon minced garlic Salt and ground black pepper / or SPG 2 teaspoons Worcestershire sauce 2 stems of chopped scallion
